Instead of buying a box of cake mix, what if you could make your own? You can.You can also make up your own mixes for pancakes, cookies, and more. You can adapt recipes to control what goes into your finished products. How handy is this and a money saver to boot.

Well isn't this a treat! Those who know me well here know I was a box cake specialist until I came to the forum and then started to try more things from scratch with reasonable success. It's great to know I can now become the specialist of my own mixes. Recently I spoke of my husband apparently being more impressed with the mixes. It would be interesting to see if I can get him excited by my own mixed creations.

I love having something quick for when a craving hits and I'm short on time. I like the idea of making up my own mixes in advance. I took a look at her fudge cake, and that looks fabulous. I especially love the Jelly Lambingtons and Salted Caramel Filled Espresso Cupcakes. Those are two that I might try, along with the plain fudge cake.

I thought it was a cool idea. I think you should totally go for it.

Anything with salted caramel and/or Expresso has to be good, if you ask me. I will probably be giving the fudge cake a try as well. We have birthdays coming up.

We always use the pre-mixed flour for pancakes and never had tried making our own. But my sister was telling me to just buy ordinary baking flour and make some experiments like using powdered milk instead of liquid milk and brown sugar instead of white sugar. Sometimes I am tempted to do that but we do not have ordinary flour at home, what we have is corn starch. I wonder how it would taste for a pancake to have brown sugar and quail eggs, huh.

I agree, and it's the time of year that everything including salted caramel should start appearing on the shelves. I got my mom some salted caramel tea bags last year, but she's never said whether or not she liked them. She'd been raving about salted caramel products. I'll have to try to remember to ask if she liked them. I've always liked espresso, as well, and coffee in general.

Is it that you don't regularly buy flour or is it hard to get or something? I know different things in different areas are sometimes a pain to get hold of. I live in a rural area, so there are some things that I cannot get easily as well. I can always get flour though, and it's even usually quite cheap.

I don't think I make pancakes often enough to try that one, but the cakes and stuff have me curious.

Aw, I have to admit that I'm quite scared with flour because I had several misadventures. But anyway, flour is easily available here, no problem in buying. I am actually urging my husband to try his hand in baking because he's got a good aptitude in the kitchen (he is the kitchen master here) so I guess he would also be good in baking. In fact, he is baking some good already like the cassava cake and pudding but he still have to try real flour for baking, I mean the bread type like bagel.
