oatmeal cookies can make you day too!!! you can keep them on a tight lid jar and have them handy during quick breaks after a chore or two at home or even bring it to the office to share with a co-working during coffee break =)
here it goes:
1/2 cup shortening
1 cup sugar
1 egg
1/2 cup evaporated milk
1 cup uncooked oatmeal
1 1/2 cups sifted flour
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup raisins
1. Cream shortening and sugar together until light and fluffy.
2. Add the egg, cream well, then stir in the milk and oatmeal.
3. Sift the flour, salt, cinnamon, and baking powder together into the oatmeal mixture.
4. Mix well, adding the raisins with the last few stirs.
5. Drop from a teaspoon onto a greased baking sheet.
6. Bake until golden brown (at least 15 mins)
