My mother gave me this pie recipe a couple of years ago and I thought I would share it because it is out of this world good. I don't remember what magazine she found it in, but it has become a holiday staple in my home:
3/4 cup cold 2% milk
1 small package of instant vanilla pudding mix
2/3 cup mini chocolate chips
1/2 cup canned pumpkin
3/4 tsp. pumpkin pie spice
1 container of Cool Whip
1 graham cracker crust
Slivered almonds and chocolate curls
In a large bowl, mix milk and pudding for about 2 minutes. Let it stand for 2 minutes or until soft-set. Stir in the chocolate chips, pumpkin, and pie spice. Fold in 2 cups of the Cool Whip. Spoon this mixutre into the crust. Refridgerate for 4 hours or until set.
Spread remaining Cool Whip on top and garnish with slivered almonds and chocolate curls.
