    Gas v Electric Oven

    My new apartment has a gas oven so I'm getting used to it. I've only made cupcakes and cookies so far, which both turned out fine. I'm hoping to make a victoria sponge at the weekend to test something a bit larger

    Margarine and Butter

    Here in Mexico I only use Lurpak butter, I'll never use anything else (the other butters have a horrible taste). In Ireland I would normally use Tesco butter or Kerrygold margerine. Normally I'd get pretty similar results using them interchangeably.

    I would normally do the same, but sausages in Mexico are not nice for sausage rolls and what I understand as "sausade meat" isn't available on sale, so I need to do everything from scratch and minced pork seemed the best option I also like thyme with them!

    It turned out great, I mixed in soft butter afterwards and it was grand, very similar to how it normally turns out. It was very sweet, when I normally make it it has a bit of a tartness, but I guess these lemons were less sour than others

    This is the cake I made this weekend. It has a very light buttercream cover, and some buttercream in the layers for support, but the cake is a regular sponge and the filling is lemon curd.     So I'm making lemon curd to put in between layers on a cake I'm making... and well I "finished" but realised I didn't put any butter into the mixture Do you guys think what I've made will be OK? It tastes great! I've just set it in the fridge to set a bit, but it "covered the back of a spoon"...
