Apple cake

I made this last night, very moist and yum. Pardon my photography, I am not a great picture taker. I will post the recipe later when I get time to write it out. I cannot find it on line to post a link, LOL Too early in the morning I guess!

Here is the recipe, I had to have a taste... LOL
Better Homes and Gardens has some really good recipes. I put my notes in ( ) to let you know what I did differently.

Apple Cake
Better Homes and Gardens
2 beaten eggs
3 cups all-purpose flour
2 tsp finely shredded lemon peel (I reduced to 1 tsp)
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
¼ tsp allspice
¼ tsp salt
1 cup granulated sugar
1 cup packed brown sugar (I used light brown)
1 cup cooking oil (I used canola)
1 Tblsp vanilla
3 cups chopped, peeled apples (I used granny smith)
1 cup chopped toasted pecans (I omitted)

Allow eggs to stand at room temp for 30 minutes.
Grease and lightly flour a 10 inch tube pan (I used my bundt)
In a medium bowl stir together flour, lemon peel, baking powder, baking soda, cinnamon, allspice and salt.
In a mixing bowl, combine both sugars, oil, eggs, and vanilla. Beat on medium speed for 2 minutes.
Add flour mixture and beat on low speed just until combined. Fold in apples and nuts
Spoon into the pan, bake at 350 deg. For about an hour, testing with a toothpick towards the center for doneness.
Cool cake on wire rack for 10 minutes, then remove from pan, and cool completely.
Store in the frig.
Side notes: the batter is very thick and you think you made a mistake after adding the flour, but don’t worry. As it bakes it rises up really nice and is very moist.

Wow! I've never heard of apple cake that's a new one. I've heard of apple danishes, but never an actual cake. My only question is does it taste like the fruit apple. Or just apple preservatives. I'm guess I'm going to have to bake it and find out! Thanks for sharing this amazing recipe and your cake looks absolutely delicious. Did it taste good too? It sure looks like it did. But I'm probably going to add icing to mine because I love everything sweet. Anyway, Thanks!

No matter the photography, as long as it tasted good! ;)
I like the concept and flavour profile...I'll probably give this one a try sometime. I'm all about apple flavours this time of year :). Thanks for sharing the recipe!

I find this type of recipe to be scary at first, with the batter being so thick, but it def. rises to the occasion!
