Banana Bread Fail

Hi, I'm hoping someone can explain what went wrong with my banana bread because it came out looking like bread pudding in the middle. The crust looked fine but the inside was gummy.

Wouldn’t know without seeing the full recipe. But most likely you didn’t bake long enough. You cannot bake to time, you have to bake to internal temperature. Use an instant read thermometer, the temperature should be 200°F-205°F. Bananas contain a lot of moisture. It’s best to microwave or cook the bananas, then drain them well. Then cook the liquid down and add it back to the bananas. Look up the recipe from Cook’s Illustrated for the technique.
