Has anyone ever tried a sketchy looking recipe that turns out perfect? For me it’s this one minus the walnuts

”Perfect” is different for everyone. If you’re looking to tweak things a little, the lighter color, thin edges, and smooth top can be changed by trying a different flour (higher-protein, unbleached), mixing less, and starting with a butter temperature of 65°F. Such changes will produce lovely caramelization for additional flavor, a cookie that does not spread too thin on the edges, and the craggy top that many strife for on a chocolate chip cookie. But then it all depends on the texture and look desired.

What is sketchy about it, the results are like a million other CC cookies.

I added baking soda to hot water, what happened? , nothing that I could see.
Maybe they're doing this to dissolve hard lumps in the soda.
