I have this recipe for a blueberry cake that everyone loves but no matter what I try coating, frozen they tend to sink to the bottom.. what else can I try ? Here is the recipe.

Oil a 9 inch loaf pan.

Topping:
1/3 all purpose Flour
1/2 cup Sugar
4 tablespoons of Unsalted Butter
1 teaspoon grated lemon rind
1/2 teaspoon cinnamon

In a Large Bowl Combine:
4 tablespoons unsalted butter
2 eggs
1/2 cup Milk
3/4 cup of sugar

In a small bowl mix:
2 cups all purpose Flour
2 teaspoons Baking Powder
1/4 teaspoon Salt

Add dry ingredients to wet.

Fold In:
2 cups blueberries (rinsed and dusted lightly with flour to avoid sinking.)
1 tablespoon grated lemon rind

Bake 50-55 minutes until pick inserted in center comes out

They probably used fresh blueberries.

Either way, I wouldn't wet them.
