I baked a red velvet cake for Xmas day to take to my sil for dessert. It turned out well only thing was when I was doing the frosting. I have noticed before too that re pies ask for way to much icing sugar, 50 icing sugar to 125gm butter and 175 gm cream cheese. Even when I was weighing out the sugar I was like who ooooh that's a lot so didn't out the whole lot in. Next time I will taste it and ad bit by bit.

Do you find this too? Also I think the sugar or too much of it makes the frosting too runny.

Hmm, I don't have that problem, but I would just keep experimenting and adjusting until you get the sugar at a reasonable level- sometimes less is more when it comes to extra sweetness in a dessert.
