Hi all, I’ve been searching the internet, looking through books, and harassing bakers, but no one seems to be able to help me find a recipe for a specific style of burger bun I want to make. Check out the photos, and let me know if you have thoughts. The keys to this style are that the bun seems to collapse a bit and is wrinkled/rippled. It’s also EXTREMELY CHEWY, almost pretzel like, but much softer and clearly less structured. It’s almost on the opposite end of the spectrum from a brioche bun.

Thanks in advance.
