I used a pasta roller machine with elec motor to make things easier.
They can be hand rolled but I'm making at least 30 shells for sale on memorial day.
Ricotta cheese is stupid expensive, $16 for 2 quarts.
I can make 2 quarts with milk and vinegar for $2.50.
Filled shells cost less than .25 cents. I can sell for $1.25.
