I need a receipe for carrot cupcakes with cream cheese frosting?
How do I cut the carrots and get the extra liquid out before adding to the batter?

Just grate the carrots. No need to remove moisture from carrots.

Since you are a beginner, the best advice I can offer in baking with carrots is this: SIFT THE LEAVENING VERY THOROUGHLY INTO THE FLOUR IF YOU DO NOT WANT TO END UP WITH UNAPPETIZING GREEN CARROTS!

Most bakers are too lazy to properly sift leavening into flour. If the baking soda is not properly sifted into the flour or too much is added, it will turn the carrots a sickly unappetizing green.
