I love jalapenos. I'm a spicy food fan, and I would love these I'm sure. My husband though is a bit weaker than me when it comes to spicy food! I might make these for when we have company over that can handle a bit of heat to their food!
Made this yesterday and just wanted to report....
We are not jalapeño fans so used a milder pepper and the corn was from a can (well drained).
I also put all of the veg into a non stick pan and caramelized it all to a gorgeous golden brown and oh so sweet.
Was going serve with a pot of pinto beans cooked with a ham bone but I was voted off the island lol.
The bread was enuf they said.....
