Hello,
I'm following a Jamie Oliver recipe for chocolate spread. But the ingredients of 40g hazelnuts and 100g caster sugar isn't forming a paste as it suggests in recipe! Anyone have any reason why? Or solutions? I'm making an Xmas gift so starting to panic!! Do I need more hazelnuts maybe??

Thanks all in advance :)

Can't really tell unless you post the recipe and what you have done so far.

If the nuts are old, or have been baked too long, the oils wont separate from them and you can get a powdery kind of paste. You can add a tiny bit of oil to it to help it smooth out and process correctly.
