choux pastry baking

Hi everyone,

Can choux pastry rest on the bench for 1 hour before being baked.

Or must it be baked straight away.

It probably depends on how warm the room is. I would think cool room is better than a warm one.

Why don't you bake immediately?

im doing a larger batch and cant fit all in my oven at once.

I have heard you can leave it out for an hour with no effect on the product but was hoping for some reassurance from an experienced baker!

Just place it in the freezer. It’s better to freeze it then to let it sit out in the open where it will form a skin.

you can cover them with an inverted tray.
