Commercial doughnut setup?

Hi all!

I am looking to open up my own doughnut shop but I was wondering if anyone could give me an idea of the absolute essentials I will need to make it work efficiently

Best type of fryer?

Best oil?

Do I need a proofing machine?

Any experience you've had I would love to hear you.

I trained at dunkies in the 1970's, you would be miles ahead if you worked the counter for 2 weeks so you can observe how they do it.
you obviously need a real donut fryer and screens and rack and a proofer for yeast raised.
But the thing you can't buy is skill.
You can watch videos on youtube and see how its done.

I watch videos on youtube for auto mechanics, I know how but I don't have their skill.
