my grandma used to make a pineapple cake with a crunchy sugar icing. the best way to describe it is that it was like a glaze she poured over the cake and it would get hard and crystalized like it had granulated sugar in it. does anyone have a recipe of anything similar. I am trying to recreate it for Christmas but can not master this icing. please help!

That sounds like such a special memory! It seems like your grandma might have used a "crystallized" or "sugar glaze" technique, where the sugar hardens into a crunchy coating. You could try making a simple glaze by melting sugar with a little water or butter then pouring it over the cake while it’s hot. As it cools, it should harden into a crunchy texture. Another option is to make a sugar syrup (cooked to a hard crack stage) and pour it over the cake this should give you that crystalized effect. Let me know how it turns out, I'd love to hear if you get that perfect crunchy icing!

That sounds fun to try out with fruits like strawberries, kiwi slices, and banana slices as well!

Good evening. I've been looking for the same for years without success. Did you find it?
