Curious baker here ... thoughts on a crushed-cookie bit idea?

Hey everyone,

I’m a snack enthusiast, small-time baker, and hopeful small business owner. I had an idea and would love some honest feedback from people who bake and love all things cookies.

My thought: a bag of finely crushed cookie bits — almost powder form — that could be used in a bunch of ways: as a topping for ice cream or yogurt, mixed into baked goods, or even eaten straight as a snack.

I got the idea because I always end up with cookie crumbs and broken bits after baking, and it feels like a waste to toss them out. I started thinking about how those leftovers could actually be the product.

I’d honestly just grab a handful and eat it on the go, but I’d love your thoughts:
• Would you use something like this in your baking or snacking?
• What texture do you think would be most useful (fine powder vs chunkier bits)?
• Any flavors that come to mind that would make it fun or more versatile?

I’m not selling anything — just exploring the idea and trying to see if it has legs.
Appreciate any thoughts or feedback!

The issues I see are:

Cookies generally have a very short shelf life, and cookie crumbs have an even shorter life due to their increased surface area exposed to air. Any product developed from them will need to be formulated to ensure shelf stability well beyond that of a typical homemade cookie.

Cookie crumbs would represent a very niche market. Many professional and advanced home bakers already know how to make their own crumbs or crunchy layers, so demand for a ready-made product may be limited. Your market is further limited by not having a clear ideal of the use for the product.

Consistency in texture and particle size is critical for applications whether you are a professional baker or a home baker. Crumbs from homemade or small-batch cookies can vary widely, which may impact performance in recipes like crusts, layers, or toppings.

High-quality, crunchy texture add-ins are readily available from established ingredient producers, such as Valrhona’s Éclat d’or flakes and Callebaut’s Feuilletine. Both companies also offer a range of chocolate crunchy pearls. Any product developed in this category will need to meet professional bakers’ expectations in terms of texture, flavor, and overall quality
