Custard Pie

So I offered to make a pie with the kid who I am a nanny for to give to his dad for his birthday. The dad really likes cherry custard pie. I have never made a custard pie and all of the recipes seem to vary a lot. Does anyone have any suggestions?

I've never made custard pie either, but what goes in my mind when I hear it is pastry cream in a pastry crust with fresh cherries, kind of similar to the French fruit tarts. Do you plan to use fresh cherries?

--and there is this. You can just do all cherry and nix the apricot. If cake and custard had a baby, it would probably be something like a clafoutis. Traditionally, the cherries are NOT pitted. There is a kernel in the middle of the pit that gives it a distinct flavor. (same kernels found in apricots and most stone fruit. Same kernels that are used to make amaretti biscuits). But if you feel like pitting them, by all means go ahead.

I am a nanny and we are making the pie with the kids for the dad. I think I would have to pit it because the cherries have to be cut in pieces to be safe for the two-year-old. I think I may try the top recipe. I think I can manage that. Thank you very much for the suggestion.
