Hi everyone! I’m having some issues with my donut dough. The first cut spreds lateral instead of rising up. The second cut with the scraps from the first cut come out perfect! The donuts are Soft, airy and have that beuatiful white ring.
Does anyone have this issue? Why the first cut is flat? Thanks!

I found that the wetter the dough, the more it spreads out. The dryer, the more it rises up. Also you can mix it longer. Try the window pane test to see if the gluten is at its peak.
