Thank you for letting me join this group. I found the group as I was searching for inverted sugar in cookies. I read a post from 2021 and there was a lot of education there. Thank you.
Due to severe food allergy, I do not use eggs in my baking. I do have a recipe I normally use and I omit the egg and add some heavy cream and/or milk to compensate for the absent egg. I want to perfect the recipe and have it be chewy and I want to try filling the cookie with either caramel or a creamy chocolate ganache. But, the main thing here is to find a better way to perfect the eggless cookie. What can you all tell me about eggless cookies?
