Egg substitutes.

Does anyone have any stories or tips to share about egg substitutes?

I tend to side with the flax + water method, but sometimes that leads to a texture that doesn't work for certain goods. Admittedly I am a little anxious about trying many other things, so success stories would be very encouraging!

I also usually just go for vegan recipes, but I also like to create things on my own (especially if there is a dish or baked good we USED to like to eat and we want a vegan version of it now).

That cupcake recipe of yours looks great. Coconut oil is SO AMAZING. It's one of the things I was grateful to come across when I went vegan. You just don't see it used in very many non-vegan recipes for whatever reason.
