I've learned that I excel at sponge cakes because I can brush them with rum, Grand Marnier and variations on simple syrup. Last Sunday I served a sponge cake filled with diplomat cream and bananas (essentially an Italian rum cake). Last Easter I served a sponge cake filled with lemon curd and coconut (iced with 7-minute frosting and coconut). I'm looking for additional cakes that are made with sponge and pastry cream/diplomat cream filling. Any suggestions?

Maybe Genoise? Genoise is unique in that by itself it is mostly tasteless. But it is an excellent carrier for any inserted flavored like liquors, syrups, over juices.

split th cake,
douse the sponge with straight Frangelico hazelnut liquor.
fill with hazelnut diplomate cream.
Finish cake with whipped cream or continue with the diplomate.
Use hazelnut cream/paste to flavor the diplomat.
