First time with commercial oven

Hi everyone
I am now transitioning from home appliances to commercial ones I have a double stacked electric oven with steam
My question is I bake alot of no knead bread usually in a Dutch oven how do I free form bake in this oven and will they hold their shape
Thanks for all suggestions

Its as simple as load the oven and hit the steam.
Dough development is what holds the shape in a hearth bread.
Banneton keeps it from flattening out when proofing.

1) yes loaves will hold their shape. Just pre-shape, rest, shape, cold ferment (optional but recommended for better flavor), score and bake.

2) follow the manufacturer for pre-heating and steaming and venting the oven. Every brand will have their own functions and controls, so you need to learn how to use your oven brand and model.

3) consider purchasing Silpat perforated baking mats. These are for bread (great for other baked goods like cookies and pate a choux) as they promote a crispy crust.
