Dinner roll is made from a lean dough. Lean doughs only contain flour, water, salt, and leavening.

Kolache is an enriched dough. Enriched doughs contain flour, water, salt, leavening, fat (usually butter), and sometimes sugar.

Using a lean dough will make a drier, breadier, and blander kolache.
