Gluten Free Bread

I recently got a gluten free bread cookbook and was wondering if anyone has made gluten free bread before. What do you use as a substitute to gluten (xanthan gum, agar gar, etc )? I'm trying to figure out if they use these thickeners to make a gel that later dehydrates in the oven. How does gluten free bread compare with flour based breads.

I haven't made bread since going gluten free, so I'm not sure. I haven't even looked up a recipe yet since I just changed the kinds of food I eat rather than finding gluten free bread. I have had a few slices of store bought gluten free bread and it did seem very similar to regular white bread. I can't remember what was on the label though, it's been a while. I want to say it was probably really high in sugar and/or refined carbs though, so I'm not crazy
