what do you think is involved in achieving a baked cookie to darken to a golden color ? I have tried using the dark brown sugar over the golden sugar, have used more brown sugar and I don’t get the result I’m looking for. I thought it may have something to do with chilling the dough longer ? Thoughts ?

you’ll see the first pic is a pale color, last one is more browned. And it is not a picture filter.

Use unbleached flour
Protein content about 11.5%

Bleached flour and lower protein flour does not brown as well as unbleached flour. This is why bleached low protein (40%) flour is used for cake. In cake you want very light color, soft crumb, no crust.

Bleached flour, higher protein

It sounds like you're experimenting with different sugars and dough chilling to achieve that golden-brown color. If those tweaks haven't worked, try adjusting your oven temperature by increasing it slightly, as a hotter oven can help with browning. Also, consider baking the cookies on the top rack or using a darker baking pan to absorb more heat. If you're still not getting the color you want, brushing the tops with a little beaten egg or melted butter before baking can also promote a richer, golden hue. These changes should help you achieve the color you're looking for in your cookies. Happy baking!
