Healthy Oatmeal Cookies with Sweet Potatoes and Zucchini

I am on a restricted diet due to health reasons. I am not a good baker, but I would like to make some oatmeal cookies using the following ingredients that I am allowed to have. Do you think it would taste alright?

1 cup cooked mashed sweet potatoes
1/2 small zucchini chopped
1 carrot grated
1/3 cup unsweetened almond milk
2 cups organic pure quick oats
Cinnamon????

Mix together and spoon and form into cookies on baking dishes. Bake 40 minutes @ 350 F or until done

Theres no sweetener of any type, no sugar or honey or anything , its going to taste like a vegetable side dish,
might be good with turkey.

I'm on a restricted diet too, I have a sheet telling me what I can't eat,
I flip it over and use it to write my shopping list.

Adding cinnamon can often trick you into thinking you're eating sweet. I've done it with whole wheat scones.
