Substitute for Double Cream in Egg Custard Tart Recipe

Hi

I’m Making an egg custard tart, well trying anyway.

I don’t even like them, trying to score some brownie points with hubby...!

Recipe asks for 500 of double cream but I only have 300. I do also have a tin of extra thick cream 170.

Can I mix n match...?!

Ps the tart is blind baking as I type so quick answers would be appreciated!!!

Without the ingredients in each one, I'd have to guess that the "extra thick" one has gums in it or carrangeenan gel to thicken it. I think you can mix them and use it normally. Some people get gas from the additives, but if it's all you have then use it by all means.
