How do I make my cookies more flat?

How come when I make my cookies, they puff up like southern biscuits. the taste is ok but the shape is annoying...

Double check to make sure you are using baking soda and not baking powder (as used in southern biscuits). Generally its a blend of oils/butter and the baking soda. Baking Powder gives the rise and baking soda flattens. However, Too much of either butter/oils and/or baking soda will sometimes produce a large unwanted cookie spread. Not sure if this helps or not. Its based on what recipe you are using but just sharing a thought to re-check the recipe.
