Double check to make sure you are using baking soda and not baking powder (as used in southern biscuits). Generally its a blend of oils/butter and the baking soda. Baking Powder gives the rise and baking soda flattens. However, Too much of either butter/oils and/or baking soda will sometimes produce a large unwanted cookie spread. Not sure if this helps or not. Its based on what recipe you are using but just sharing a thought to re-check the recipe.
