How do they make this croissant?

There’s a restaurant that makes a croissant-like laminated pastry in the shape of a muffin, with a very crispy and crunchy outside, but a very gooey and buttery inside. It’s savory. I cannot figure out how they do it. video link below.

There appears to be about 8 layers. The middle has an egg in it and sauce below. I don’t think that is what does it.

Any idea how do they this? I’ve never seen a recipe online for a croissant like this or puff pastry.

It just looks like laminated dough twisted into a Swedish knot with the center opened up to hold the egg. While Kate Reid’s croissant book doesn’t have a pastry exactly like this, she includes a lot of different shaped laminated pastries, and everything has a filling. She also created a lamination process for home bakers since it is difficult to laminate dough properly without a sheeter.

that looks like pastel del nata, see youtube videos.
I'd use frozen puff dough.
