I am making or attempting to make a sweet short crust pastry for a lemon meringue pie!

I made the pastry this morning. I want to cook it in next couple of days. Is it ok to be in the fridge until I need it?

Very new at making pastry, so all help appreciated.

Thanks!

Two days is fine. In fact a shorten crust should be rested overnight in the refrigerator. If you need to store longer than a couple of days, simply roll it into desired shape; freeze flat or in the baking tin. Just make sure it's securely wrapped.
