I'm really in the mood for some Italian herb and cheese bread. It's what Subway has but I refuse to pay $6 just for the bread and nothing in it as a sandwich. I just want the bread.

Does anyone know of a rather simple and quick recipe for this type bread?

You can easily create your own spread and it may be better than what is offered at a fast food restaurant.
I'm assuming they use a French or other dense bread that normally cost a dollar or so at the supermarket. Dried Italian herbs are sold in the seasoning section but fresh herbs are sold separately in the produce section (normally by the salads).
Mix chopped herbs in with softened whipped butter or a cup of olive oil. Now, I don't know what type of cheese Subway uses but my choice would be medium cheddar. The shreds can be mixed in and spread on the bread.
