Monday, I received a last minute request for cupcakes to be made by Wednesday. A little girl wanted to have cupcakes for her class. Since her mom, who works at the school, has tried my cupcakes before, she asked my mom, who also works at the school, to ask me to make them.
I was more than happy to do so. Although it was a last minute request and I didn’t have much time to work with I love how they turned out.
I recently got new baking supplies and I was able to use them to do these cupcakes.

Question... :) I noticed the cupcakes had double cupcake liners, I was wondering the reason behind it?

Well I guess it’s become a habit, I suppose. In the beginning I did it because every time I baked cupcakes, you couldn’t see the color of the liner, especially when I baked chocolate or red velvet cupcakes. And when I had party or holiday liners I wanted people to be able to see, the couldn’t unless I used two liners. They are so inexpensive that it isn’t a big deal financially speaking.
Also I like doing it when I have a certain amount of cupcakes to bake and the container I package them in is a little too big. The extra liner helps take up some of that space so the cupcakes don’t tip over. One thing I started doing recently is adding a little dab of buttercream on the bottom of the liner so it’s pretty much guaranteed not to tip over in the container. And when you pick a cupcake, the second liner stays in the container and your fingers aren’t covered in buttercream.
Unless you’re a messy eater. Lol!

That's really clever! I'll have to keep that in mind the next time I bake cupcakes :)

Thanks! And it really is a lifesaver. I don’t even know how many times I’ve baked cupcakes and transported them to a party and ended up with half the box tipped or smashed. I’ve learned my lesson. Lol!

They are lovely! Are some of those made with Russian piping tips? I've seen some demos online but don't have them.

Also, clever tip about the buttercream gluing the cupcakes in the carrier. I was worried about that at Halloween and the tip I found was non skid shelf liner for the bottoms of the boxes. I also packed them up and had a space left in the middle of the box, so I put in a small jar filled with chocolate covered espresso beans (which were also on each macchiato cupcake.)

Thank you! I’ll post a picture of the tips I’ve used. They are new so I’ve only used two of them. The other ones I used a few of my other tips.
Oh and the non skid shelf liner is a great idea. I’ll have to try that next time I have an order.

I got a really awesome deal on the two pastry kits. I paid $25 for both sets. I was so excited that I found such a great deal. They came with a few other things including a coupler to make a three colored swirl butttercream which I’m excited to try. And a rose nail. I’ve never been able to find one at the store and one of the kits came with one.
