Latik from coconut

Latik is a Filipino word which has no translation in English. It is hard to describe and since I have no picture so I am forced to describe it in the best way that I could. The coconut milk is cooked in a pan, just the coconut milk that you keep on boiling until the oil comes out and what would be left are like white sediments that when cooked will turn brown. These sediments is called Latik which has an exotic taste. It is used for garnishing native delicacies as rice cake. One American friend was so curious with the Latik that she had asked us to make a cupful for her to bring home to the US.

It sounds like a lot of the sweet things in the Philippines are made with coconut - which is great since I love it!!
