Often more times than not I attempt to eat healthier or at least cut back. It never lasts long as you can see by my waistline, lol, but this is one of my favorite desserts when I am watching what I eat.
Low-Fat Orange Dream Cheesecake
3 c. graham cracker crumbs
1 pkg. orange sugar-free Jello
1 c. low-fat cottage cheese
2 c. thawed fat-free Cool Whip
1 (8oz.) pkg. fat-free cream cheese
Sprinkle crumbs on bottom of pie plate sprayed with cooking spray. Stir boiling water into Jello per box instructions, use large bowl. completely dissolve allow to cool for approximately five minutes. Pour into blender and add cottage cheese and cream cheese, blend well. Pour into bowl gently stir in cool whip. Pour into prepared pan and refrigerate four (4) hours or until set. Serves eight (8).
