Hello, I am new here. Ok have been baking for quite a while now, but still haven't found the perfect sponge recipe.

Does anyone have a really good standard sponge recipe that always comes out lovely and moist. Not dry and dense!

Measurements for a 8" tin would be great!

It’s the nature of the beast. The sponge cake is a foam cake. It is leavened with egg whites.

A sponge cake is a dry cake. A sponge cake contains 150% egg to flour by weight. And it contains 0% fat. The cake is soaked in simple syrup to counter the dryness.

The Italians make a genoise, which is a type of sponge cake, but is made with melted butter.

What the British call a Victoria sponge is not a sponge cake at all. It is a shortened cake, also referred to as a butter cake. Leavening is achieved by creaming the butter and sugar. Modern recipes also use chemical leavening (baking powder, baking soda).
