Help with Remembering Kneaded Biscuit Recipe

Growing up, a friend of my parents would always make biscuits. I remember a few details but I can't remember or find a particular recipe for them. (I make southern style buttermilk biscuits but these particular ones were not what I make)
Here is what I remember:
-they were rolled in her hand and not cut out.
-they were cooked in a glass dish
-they were kneaded!!! Traditionally kneading biscuits more than a few times is usually a big no no, but I am confident that she kneaded these biscuits quite alot.
-I don't particularly remember them being drenched in butter like butter swim/butter melt biscuits. I want to say she used alot of oil maybe on the outside and in the pan instead???

I can't get past the kneading. What ingredient difference would cause biscuits to be kneaded? Did she use yeast?
