Need idea for make-ahead brunch treat to serve at room temp.

Looking for a brunch treat (e.g. muffin, cinnamon roll, quick bread, etc.) that can be made as much as possible (ideally entirely) in advance and will taste good when served at room temperature.

I will be taking it with me to a class and leaving 2-3 hours before it will be served, with no opportunity to warm it up.

Bonus points for something that looks impressive, tastes amazing, and incorporates fall flavors (such as pumpkin or apple).

How about a brioche couronne? They're pretty tricky, but worth the effort! I've only ever made a savoury one before, but they are usually sweet - a cinnamon sugar filling would be lovely.
