Hey guys!
I was recently diagnosed with celiac disease, and to be honest, it’s something completely new to me. I really love baking and cooking - it’s actually my biggest hobby. I was wondering if you could give me some advice about gluten-free products and recommend which brands are the best.
It’s already autumn, so I’d love to make my favorite cinnamon rolls. Do you have a good recipe for these delicious gluten-free treats?

Baking gluten-free is completely different from baking with wheat flour. It’s an entirely new way of baking, so there is a major learning curve.

One thing to keep in mind is since there’s no gluten to provide structure, most gluten-free recipes rely heavily on binders mixed with refined starches like tapioca, potato, or rice flour. These starches are digested very quickly, which gives many gluten-free baked goods a higher glycemic impact (blood sugar spikes) than their wheat-based counterparts. You can reduce this by blending in higher-fiber flours such as almond, oat, or buckwheat and by adding protein or healthy fats to help slow digestion and steady blood sugar. Even so, gluten-free baked goods are best enjoyed in moderation.

Some GF free flour blends are marketed as 1:1 substitute for wheat flour, but don't buy into that lie. There’s no standard for gluten-free flour blends, so no two brands contain the same ingredients. It's best to use the gluten-free flour blend manufacturer’s recipes since their test kitchens should have tested them.
