Not enough gluten

I have my machine broken and i cant use it at higher power. This makes my bread not developing gluten and starting to rise inside the machine. I could knead by hand, but i have to work with large amounts of dough and its too time consuming. I have no clue how to solve this. I make sourdough bread with a industrial starter and also make a pseudo brio he bread (a more dense variation). Im cinsidering switching recipes completely because of the quiligy downgrade due to the equipment's inadecuacy, but even then i dont k ow of good alternatives.
