Oatmeal and raisin cookies

I baked some oatmeal and raisin cookies last night for my hubby - he's recovering from having his tonsils out on Wednesday, so I wanted to make him a nice treat! They are really yummy, so I thought I'd share the recipe here! It's taken from The Hummingbird Bakery Cookbook:

270g butter
160g caster sugar
160g soft brown sugar
2 eggs
0.5 tsp vanilla extract (I used vanilla bean paste)
1 tsp salt
380g plain flour
1 tsp bicarbonate of soda
0.5 tsp cinnamon
110g rolled oats
220g raisins

  1. Cream together the butter and sugar until light and fluffy
  2. Add the eggs one at a time, mixing well after each one
  3. Add the vanilla extract, salt and cinnamon, mix well, then add the flour and bicarb of soda and stir together until well combined.
  4. Add the oats and raisins.
  5. Spoon on to a lined baking tray, and bake for 12-14 minutes at 170C (fan).
  6. Cool on a wire rack and try not to eat them all at once!
