Old Fashioned Poppyseed Cake

Ingredients
  • 3 eggs
  • 1-1/2 cups milk
  • 1 cup canola oil
  • 1 tablespoon poppy seeds
  • 1-1/2 teaspoons almond extract
  • 1-1/2 teaspoons vanilla extract
  • 1 teaspoon butter flavoring
  • 3 cups all-purpose flour
  • 2-1/2 cups sugar
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • GLAZE:
  • 3/4 cup confectioners' sugar
  • 1/4 cup orange juice
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon butter flavoring
Directions
  • 1. In a large bowl, beat eggs, milk, oil, poppy seeds, extracts and flavoring. Combine the flour, sugar, baking powder and salt; add to egg mixture until blended.
  • 2. Pour into a greased and floured 10-in. fluted tube pan (or use a bundt pan). Bake at 350° for 60-70 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
  • 3. In a small bowl, combine glaze ingredients until smooth. Drizzle over cake. Yield: 12-14 servings.
