Orange Creamsicle Cookies

from Ari's Menu:

Ingredients
  • 1 1/4 cups white whole wheat flour
  • 1/2 tsp baking powder
  • dash salt
  • 1/2 cup sugar
  • Zest of one orange
  • 1/2 cup reduced fat cream cheese, softened
  • 1 tbsp fresh orange juice
  • 1 large egg white
  • 4 oz good quality white chocolate squares or chopped into large chunks
Instructions
  1. In a medium bowl, whisk together flour, baking powder and salt. Set aside.
  2. In a large bowl mix together sugar and orange zest. Then beat in cream cheese, egg white, and orange juice until combined. Slowly, beat in dry ingredients until combined, scraping down sides of the bowl as necessary. Refrigerate dough for 30-60 minutes.
  3. Preheat oven to 350. Roll cookies into 1? balls, then stuff with a white chocolate square. Re-roll into 1? ball, making sure all the white chocolate is covered. Repeat with remaining dough.
  4. Bake for 9-11 minutes until golden. Cool completely on baking sheet. Store in a loosely covered container for 5-7 days.

Ooh they sound really tasty! Does the white chocolate stay kinda melted after baking?

These look and sound so good. My daughter and I will be getting together next week and I think we may give these a try:)

I wish my oven was working I would definitely try these, but instead I think I'll use regular flour. I don't like how wheat flour tastes.

Ack! These make me want to cheat! haha.. I used to love creamsicles as a child, these are probably delicious.
