Oval donuts

Hello there I have a small problem with my donuts, many turns oval during proofing and frying. What could be wrong, I have decreased the wet content to get a firmer dough but they still turns oval. I have a "dull" cutter and have to twist at least 90 degrees to release them.

I think you're rolling it too far in one direction.
Don't roll it into a long strip, better to roll into a large circle so its stretched equally in all directions.
I'd also try to put the moisture back that you took out .

Thanks, I think you are right, I do roll it out in a rectangle. I will try circles today.

What I meant is if you roll equally in all directions it cannot form a rectangle.
Allow a few seconds for the dough to relax after rolling,
fluff it to allow any elasticity to pull it back to a relaxed condition,
then press it out gently to make sure its even thickness.
Its easier done than said.

Cut one out and see if it shrinks more in one direction, if it goes oval it needs pulling back in one direction.
