Made toasted coconut pie. It was great then I placed it in frig. Filling turned to sugar. Not sure if I reheat it will go back or not. Any suggestions?

Use dry dessicated coconut.
Not the sweetened shredded type.

It sounds like the sugar in your coconut pie filling may have crystallized after being refrigerated. When you reheat it, there's a chance it might get a bit smoother, but it could also stay grainy. One thing you could try is reheating it gently in a double boiler to avoid direct heat, which might help restore some of its original texture.
