I you are in the US or UK the best cake only cookbooks are Rose Levy Beranbaum’s Cake Bible and Heavenly Cakes.

If you want a professional textbook to train like a professional pastry chef, the Michel Suas Advanced Bread and Pastry. This book is not recipe focused. It is a textbook. So it is full of information on science as well as professional methods. It uses weight measurements, not volume. And it covers everything from bread, pastry, cake, to chocolate.
