Salted Caramel recipe?

Any good recipe for salted caramel? I'm trying to make one from Jemma Cupcakes on youtube..

Yesterday I saw two different caramel on a scone, one caramel breaks down into a liquid-like and the other one still retain its shape, how did this happen?

Its the same sauce .

They applied caramel to the hot scone, it melted, after it went cold they applied more and it didn't melt.
