1 cup sugar = 200 g
1/2 cup sugar = 100 g
1 cup flour = ??? Depends on how you fill the measuring cup. Could be anywhere from 120 g to 140 g.
If you spoon and level the flour, then
it’s probably closer to 120 g.
if you dip and level then it’s closer to 140 g
120 x 1.75 = 210 g flour spoon and level
140 x 1.75 = 245 g flour dip and level
100 g sugar / 210 g flour = 0.476
100 g sugar / 246 g flour = 0.406
you have roughly 48% using the spoon in level method and 40% sugar using the dip and level method.
you can reduce the sugar as low as 25% for shortbread.
25% of 210 is 52 g - equivalent to 1/4 cup
25% of 246 is 61 g - equivalent to 1/3 cup - 1 TBSP
