Soft n Chewy "Brittle"

Even the most experienced people in the kitchen can't get it right sometimes.

Not that I'm that experienced, but recently have attempted to make Sesame Brittle for someones birthday gift.
Even though I followed the directions "to the letter", it never got hard.

I did a bit of research on brittle that doesn't get hard and found you can remelt it and try again.
My research also found that brittle won't get hard if it's not cooked long enough first.

I made another batch today, and cooked it on a higher heat as well as cooked it till it almost got burned.

And STILL it didn't get hard.

I've never made candy before that wasn't some form of chocolate, so I know I'm a newbie to this kind of candy making. My granny could make this stuff in minutes and it was hard as a rock as soon as it was partly cooled.
I don't know what I did wrong, but apparently it's not something I would like doing, much less be good at.

So, I hope my friend likes Sesame Chewies, instead of brittle!!!! LOL

I made some around christmas time and it was good and crunchy - I'll see if I can find the recipe. One thing that I remember being very important was low humidity - moisture makes it really soft. Bet it will still be delicious though :D

Yeah, the info I found online said humidity makes it sticky and sometimes hard to set, but I don't think it's been humid here for a couple weeks at least. Well, it doesn't feel humid, and hasn't rained any.

Here's the recipe I used (from Hummingbird Bakery) - it's for peanut brittle, but I used a mix of nuts and seeds including sesame:

I knew the mixture was supposed to boil!!!!

But the recipe I have says cook on medium heat for 15 minutes.

I will have to attempt that again, when I have the gumption. LOL

I used a sugar thermometer too, just to be safe. I took it off the heat when it got to 'hard crack' :)
